Berry Breakfast Crumble


Berry Breakfast CrumbleI made good use of the berries we picked up at the Calabasas Farmers Market last weekend by whipping up this hot berry breakfast crumble.  Packed with ingredients like walnuts, flax seed, raspberries, blueberries & oats it packs an omega-3-fiber-infused antioxidant punch. The recipe is very simple, took only 20 minutes to make including bake time, and it tasted great.  Things always seem to taste better to me when I know they’re good for me though.  I hope you enjoy it! Step 1: Preheat the oven to 350 degrees

Step 2: Combine Flax Seed, Walnuts, berries, soy milk, cinnamon, nutmeg & blend

Nutmeg

{1/2 teaspoon of nutmeg}

Cinnamon

{1/2 teaspoon of cinnamon}

Walnuts

{1/2 cup of walnuts}

Flaxseed

{1 teaspoon of Flaxseed}

Berries

{1 cup of mixed berries for the blend. I used blueberries and raspberries}

Prunes

{3 prunes}

Soy Milk

{1/4 cup of Soy milk}

Step 3: Layer 1 cup of berries on the bottom of a ramekin & cover with blended mixture.

Berry Blend

{Fold in mixture without smashing the berries}

Step 4: Cover berries with Oats n Honey & bake for 15 minutes

Oats n Honey

{mix 1/2 teaspoon of honey into 1/4 cup of oats. Cover mixture with oats & bake}
