Green Egg Salad Sandwich

Green Egg SaladEgg salad was my absolute favorite sandwich as a kid. The thought of it still evokes fond memories, but years ago Jennifer Aniston cited giving up mayonnaise as the key to what got her in such great shape and I basically haven’t eaten mayo since. That said, I created this recipe for my favorite sandwich using avocado instead of mayonnaise and it tastes just as great. I made it for lunch last week and it brought a kid’s smile to my face. Recipe is below the post.

Green Egg Salad

{Ingredients: two hard boiled eggs, 1/2 an avocado, handful of micro greens}


{Put the Avocado into a bowl with a squeeze of lemon juice and mash}

Chopped Eggs

{Chop the hardboiled eggs}

{Combine mashed avocado with chopped eggs, paprika, mustard, S&P}

Green Egg Salad Sandwich

{Spread egg mixture on toasted slices of whole grain bread & top with micro greens}

Green Egg Salad Sandwich Recipe


2 hard boiled eggs

1/2  ripe avocado

handful of micro-greens (broccoli, spinach, etc. Found at Trader Joe’s}

1 squirt of Mustard

sprinkle of salt & pepper

sprinkle of paprika

*1/2 teaspoon of chopped pepperoncini for extra kick (optional)

*1/2 teaspoon of dill pickle relish for tangy twist (optional)
