Healthy PancakesSaturday mornings at our house usually involve heading to Starbucks for breakfast on our weekly trip to the gym. Last Saturday we headed out a bit later than usual and I whipped up the quickest and healthiest batch of pancakes I’ve ever had, thanks to my friend Rathy who sent me this recipe from TheSkinnyConfidential. It literally involves throwing nothing but a ripe banana and two eggs into a blender and pouring silver-dollar-sized portions into a pan. A welcome gluten free, dairy free way to fuel up for the day.

Banana & 2 Eggs

{Add one banana and two eggs to a blender. I used the Nutribullet}

Silver Dollar Sized

{coat the pan with coconut oil and pour batter into the pan the size of a silver dollar}


{flip once and serve warm with two tablespoons of agave or maple syrup}
