My diet restrictions have been so specific for the last 5 years that I don’t really have a simple way of describing the way I eat. I rarely have dairy. I have soy instead of milk in my decaf cappuccinos although once a week I treat myself to pizza (except for lately I’ve been obsessing on ice cream) so I do eat dairy, which means I’m not a Vegan. I don’t drink caffeine or alcohol. I’m also not supposed to have a lot of sugar, but I treat myself to at least one cookie a day (and lately that has blossomed into 2 or three cookies) I limit white flour for the most part (except on Sundays when I treat myself to those little chocolate donuts) I try to focus on lean protein like chicken and fish, vegetables, fruits, not processed foods or fried foods (except for In N Out Grilled Cheese Sandwiches and fries from Nordstrom Cafe)… as you can see, I make lots of exceptions. I realized I needed to refocus on eating healthier. The closest thing I was able to find that aligns with my diet is Paleo, but I don’t eat red meat, so it’s not a perfect fit, but let’s call this breakfast the Paleo Egg Scramble. It combines 4 whole eggs (including the yolks) which I typically don’t do either but Paleo allows for a healthy amount of fats so I included them. I also used olive oil in the pan to heat up the veggies (usually I just use water). I threw in a handful of power greens (baby kale, baby chard and baby spinach) along with one tomato chopped. I then added the eggs and stirred until they were the consistency I desired. It took less than 10 minutes to make, which was the best part.
